It has been said that Valdespino's Inocente is the Romanée-Conti of fino sherry. It is one of the last of the finos still made in the old way, fermented in oak casks, and fermented with indigenous yeasts. Most sherries today are now made in stainless steel. The grapes are grown in the grand cru area of Marchanudo Alto in Jerez, in Albariza white chalk soils. Bone dry, but with more richness and breadth than is typical for standard fino.
