Ridge is one of California's most historically important producers, and their Monte Bello estate in the Santa Cruz Mountains has been making age-worthy, terroir-driven Cabernet since the 1960s under the long tenure of winemaker Paul Draper and now his successors. Ridge has always taken a minimal-intervention, "pre-industrial" approach—native yeasts, minimal additions, and total transparency about ingredients on every label.
This estate Cabernet shows the mountain fruit's characteristic structure: blackcurrant, cedar, and dried herbs with firm, cellar-worthy tannins and real acidity from the cooler, high-elevation vineyard. It's more restrained and savory than typical Napa Cabernet, built for the long haul.
Pair it with grilled steak, lamb, or aged cheeses.
