Fielding Hills sits in the Wahluke Slope AVA, one of Washington State's warmest growing regions where the Columbia River moderates temperatures and ancient Missoula Flood soils provide incredible drainage. Mike and Karen Wade started this project in the early 2000s, farming sustainably and making wines that showcase Washington Cabernet's power balanced with elegance.

The 2017 vintage was excellent in Washington—warm and steady, allowing for long hang time and full ripeness. This Cabernet shows ripe blackberry, cassis, and dark chocolate with hints of cedar and tobacco from aging in French oak. The tannins are structured but polished, and there's this beautiful purity to the fruit that speaks to careful farming and minimal intervention in the cellar.

This has aged beautifully and is drinking gorgeously now. Pair it with grilled ribeye, braised short ribs, or aged cheddar.
