Cour-Cheverny is a tiny Loire Valley appellation dedicated to one grape: Romorantin, an ancient variety that's grown nowhere else. Domaine Tessier is one of the appellation's best producers, farming organically and making wines that show what this unique variety can do.
This is Romorantin at its finest: citrus, white flowers, and quince over this incredible mineral backbone. It's got the acidity and structure to age for years, developing nutty, honeyed complexity, but it's also delicious young. The wine sees time on the lees in neutral oak to add texture.
Pair it with Loire Valley goat cheese, grilled fish, or asparagus. This is one of France's most unique white wines.
