Alice and Olivier De Moor have long been among Chablis' most respected natural winemakers, and Vau de Vey is one of their standout Premier Cru holdings—a tiny, steep, southeast-facing 0.92-hectare parcel. This is 100% Chardonnay handled with real patience: long alcoholic and malolactic fermentation in 228-liter barrels, then a year or more on the lees without racking or cold stabilization, usually bottled unfiltered.
The result is vivid, green, and flinty, with a saline mineral edge and a lively, chiseled structure that's classic De Moor—precision over richness.
