The De Moors acquired this 0.82-hectare Mont de Milieu parcel in 2017, and it's about as hands-on as Chablis gets—the slope is so steep it has to be worked by horse rather than tractor, which is exactly why most neighboring growers reach for herbicide instead. The name means "mount of the middle," a reference to its position on the old border of Champagne. Vines at the base were planted in the 1980s, while the middle and top date to the 1930s; those old vines run naturally low-yielding and concentrated due to court-noué, a vine condition that reduces vigor.

Same patient approach as their other Premier Crus: long fermentation in 228-liter barrels, a year or more on the lees without racking, typically unfiltered. Expect real depth and mineral drive from that old-vine fruit.

Pair it with roast chicken, mushroom dishes, or aged Comté.
