Stella Puel's path back to Château Bardins wasn't planned—she was working as a German translator when her father suffered a serious head injury in 1994, and she returned home to Cadaujac to take over an estate her great-grandfather founded in 1898 (with winemaking on this land traced back to the Middle Ages). She learned as she went, and today Bardins is one of only three certified-organic producers among Pessac-Léognan's roughly 70 châteaux—she converted in 2009, certified with the 2019 vintage.

Of her 24 hectares, only 10 are planted, the rest deliberately left as woodland for biodiversity (she's even built bat houses into the cellar walls). The blend is roughly 65% Merlot, 20% Cabernet Sauvignon, and 15% Cabernet Franc from vines averaging 25 years, with some parcels up to 70. Hand-harvested, spontaneously fermented, gently pumped over rather than punched down, aged nearly two years in 25% new oak. This is thoughtful, small-production Pessac-Léognan from someone who farms it like she means it.

Pair it with duck, roasted lamb, or aged Comté.
