János Hajdú and Krisztián Farkas started Bodrog Bormühely—literally "Bodrog wine workshop"—to make pure, dry, modern wines from tiny historic parcels in Tokaj, a region that established the world's first appellation system over a century before Bordeaux. Their Lapis vineyard sits above the Bodrog River near Bodrogkeresztúr, a mere 0.7 hectares at 155 meters, breezy enough to avoid the botrytis that dominates so much of the surrounding area—making dry wine here a real achievement.
The soil is a mix of rhyolite, brown clay, and tufa; some consider it a candidate for Grand Cru status if Tokaj vineyards were ever formally reclassified. Just 5–6 hours of skin maceration, settled overnight, then six months in local oak. The result is Furmint that's creamy without being heavy—honeyed stone fruit and warm spice, balanced by ripping acidity.
Pair it with roast chicken, aged cheeses, or spiced fruit desserts.
