Stéphane and Bénédicte Tissot run one of the Jura's most important estates, farming biodynamically across a mosaic of parcels around Arbois. 

Trousseau is one of the Jura's signature red grapes—pale, aromatic, and totally distinct from anything else in France. The Tissots ferment and age this cuvée in amphora (clay vessels), a technique that adds texture and a subtle earthiness without imparting the vanilla or spice you'd get from oak.

This is Trousseau at its most transparent: wild strawberry, pepper, and dried herbs with a light, almost translucent body and racy acidity. The amphora aging gives it a slightly textural, savory grip that makes it feel more serious than its pale color suggests. It's a wine that rewards a slight chill and an open mind.

Pair it with charcuterie, roast duck, or mushroom tart.
