Stéphane and Bénédicte Tissot run one of the Jura's most important estates, farming biodynamically across a mosaic of parcels around Arbois. Sous la Tour is a specific site, and the Tissots' meticulous, plot-by-plot approach (they bottle dozens of distinct cuvées) means every wine reflects a precise piece of ground rather than a broad regional blend.
This shows Jura Pinot Noir's particular charm: bright red cherry and cranberry with an earthy, almost wild mushroom-like undertone that you don't find in Pinot from warmer places. The tannins are light, the acidity is vivid, and there's a real sense of specific place here. Minimal intervention winemaking lets that come through clearly.
Serve it with a slight chill alongside charcuterie, Comté, or roast chicken.
