Stéphane and Bénédicte Tissot run one of the Jura's most important estates, farming biodynamically across a mosaic of parcels around Arbois.
En Barberon is one of the Tissots' Chardonnay parcels, vinified in the "ouillé" style—meaning the barrels are kept topped up to prevent oxidation, as opposed to the oxidative, under-flor style the Jura is also famous for. This gives a purer, more fruit-forward expression of Chardonnay than a Vin Jaune-style wine.
This shows citrus, orchard fruit, and white flowers with a chalky, marl-driven minerality underneath. It's fresh and precise rather than nutty or oxidative, with the kind of tension you'd expect from a producer this obsessive about site expression. Biodynamic farming shows in the wine's energy and clarity.
