Jesse Katz's Aperture project shows what California can do with Sauvignon Blanc when farmed meticulously and vinified with restraint. Rather than going for tropical fruit bombs, Katz makes Sauvignon that's precise, mineral-driven, and built for the table.
This shows citrus, white flowers, and fresh herbs over a stony mineral core. It's got the intensity and concentration of serious Sauvignon but stays balanced and refreshing. Partial fermentation in neutral oak adds texture without overwhelming the fruit's purity.
