Arianna Occhipinti built her reputation on Frappato and Nero d'Avola, farming biodynamically around Vittoria since the early 2000s and becoming one of Sicily's most influential natural winemakers. Serracalcara is her take on Grillo, sourced from a southwest-facing rocky ridge in the Serra San Bartolo contrada, where calcareous limestone laced with white sand and iron gives the grape real backbone.

This is Grillo with tension rather than tropical weight: light skin contact and spontaneous native fermentation give it a flinty, struck-match edge over yellow grapefruit and crisp mineral depth. Aged in concrete for 8–9 months and bottled unfined and unfiltered, it's fresh, lively, and restrained—Occhipinti's hands-off philosophy applied to a grape more associated with western Sicily.

Pair it with fresh white fish, shellfish, or pasta con le sarde.
