Creamy green and yellow apple, with vanishing hints of grapefruit, lemon, and lime. Some herbal notes, a beautiful and elegant expression of the grape.
Chitry is a white wine appellation that lies adjacent to the Chablis appellation and shares the wonderful limestone terroir with it. The wine has all the characteristics of a Chablis but at a lower price. It is a pure Chardonnay and is classified as a Burgundy Village wine.

Alice and Olivier de Moor produce sublime white wines in the Chablis village of Courgis in Northern Burgundy. They have created a serious reputation for themselves which now means the wines are like gold dust. You can expect precision and finesse.

The grapes come from two parcels. The first 2.5 hectare plot called Champagne that was planted in 1995 (the estate's Bourgogne Aligoté is also sourced from there). The second is a 1.2 hectare parcel planted in 1998. Both are in the village of Chitry-le-Fort. Both vineyards have about 25cm of topsoil before hitting right on a mother rock of Kimmeridgian limestone.

Fermentation and aging can occur in different  vessels each vintage  depending on the global quantities. For this wine, 228l barrels and 2500l foudres are usually used along with enamel lined tanks in generous vintages.

Long alcoholic and malolactic fermentation in old oak barrels. Aged 11 months on the lees without racking or cold stabilization. Usually bottled unfiltered.
