Carboniste is a great new project started in California by Dan and Jacqueline Person devoted to sparkling wines. After working for 3 years at Napa Valley’s iconic Schramsberg, Dan decided that California was in need of a new vision for sparkling wine. “In my mind, you don’t try to make Bordeaux in Burgundy, that would be silly … So why are we, in California, trying to make Champagne? The climate is very different, the soil is different, fundamentally we have a different terroir … So I launched this company as an experiment to figure out what we could be doing in California that’s not simply an emulation of Champagne.” Carboniste’s ‘Octopus’ wine is a sparkling wine made from Albariño grapes. The wine goes through 2 fermentations, one in tank and one in bottle, like in Champagne, but here the emphasis is on showcasing the fruitiness of Albariño, so the wine is only aged on the lees for 4 months.
