There aren't too many wineries that have deeper roots in Napa than Mayacamas. Originally founded in 1889 by John Henry Fisher. The property has changed hands a number of times (most recently purchased by the Schottenstein family) but has produced wine continuously for over 100 years and in that time they have never caved to trends or fashion, always making wine in their own way. The house style relies on fermentation in vat and aging in large, neutral cask, a relative rarity in Napa but a technique they have used since the early 1940s. The winery itself is perched high up above the Napa valley in the Mayacamas mountains in the Mount Veeder AVA. This is as old school, as soulful as Napa Cab gets - an American Classic. - Andy Paynter
