The Doyard family has been growing grapes in Vertus—one of the Côte des Blancs' Grand Cru villages—since 1677, but it wasn't until Maurice Doyard in the 1920s that they started bottling their own Champagne. Today, Yannick and his son carry on that legacy, farming organically and making wines that let the chalk speak.

"Revolution" is their entry-level Blanc de Blancs, but that "entry-level" tag is misleading when you're talking about Grand Cru Chardonnay from one of Champagne's best terroirs. This is all about precision and minerality: green apple, white flowers, and Meyer lemon zest over this incredible chalky texture that feels like drinking the soil itself. The bubbles are fine, the acidity is razor-sharp, and there's this beautiful yeasty complexity from time on the lees.

Pop it as an aperitif, pair it with oysters, or drink it with anything involving butter and lemon. This is serious Champagne at a price that makes sense.
