Unlike much of the traditional, oxidative Château-Chalon style, François Rousset-Martin has made his name with "vins ouillés"—topped-up, non-oxidative wines that show a fresher, more immediate, more site-driven side of Jura terroir, an approach he brought back from his training in Burgundy. La Chaux is one of his signature parcel-specific Chardonnay bottlings from around Château-Chalon.
Expect orchard fruit, citrus, and flinty minerality with real precision and freshness—closer in spirit to top-tier Chablis than to the nutty, sherry-like wines the Jura is traditionally known for. Made with little to no added sulfur and bottled unfined and unfiltered, this shows why sommeliers have gotten so excited about Rousset-Martin in just a few short years.
