François Rousset-Martin grew up in Beaune, where his father worked as a microbiologist for the Hospices de Beaune, but summers spent in the Jura with his winemaking grandfather planted the seed. He took over the family's scattered vines around Château-Chalon in 2007, worked them alongside the local cooperative for over a decade, then went fully independent in 2018 — quickly becoming one of the most talked-about new names in the region. Cuvée du Professeur is named for his father, and comes from a quarter-hectare parcel of Savagnin in the Sous-Roche vineyard in Château-Chalon, made in the traditional sous-voile (under-flor) oxidative style.
Expect the classic Jura signature: green apple, curry spice, walnut, and a saline, almost briny minerality that builds and lingers. Made with little to no added sulfur and bottled unfined and unfiltered, this is intense, savory white wine built for contemplation and long aging.
Pair it with Comté, roast chicken with morels, or curried dishes.
