Alessandro Dettori farms old, ungrafted bush vines around Sennori in northern Sardinia, many over a century old, using nothing but the most minimal intervention—no chemical treatments, native yeast fermentation, often no added sulfur at all. He's one of Italy's most uncompromising natural winemakers, and his base "Dettori" red is built almost entirely from old-vine Cannonau (Grenache), grown on limestone and sandy soils close to the sea.

This is Sardinian red at its rawest and most honest: wild red fruit, garrigue, and a saline, earthy undertow that speaks clearly of place. It's unfiltered, unfined, and genuinely alive in the glass—expect it to evolve as it sits open.

Pair it with grilled lamb, wild boar, or aged pecorino sardo.

Region: Sardinia, Italy (Sennori)
Variety: Primarily Cannonau (Grenache), old vines
Farming: Organic, minimal intervention
Winemaking: Native fermentation, unfiltered

Explicitly delicious.
