André and Mireille Tissot founded this estate in 1962 in Montigny-lès-Arsures, just outside Arbois. Their son Stéphane joined at 19 in 1989 and took over with his wife Bénédicte the following year, gradually converting the vineyards to organic farming (certified 1999) and then biodynamics (Demeter-certified 2004) — among the first estates in the Jura to do so. The domaine has grown from its original plot to roughly 46 hectares across prized sites like Les Bruyères, La Mailloche, En Barberon, and Curon, farmed with selection massale rather than clones and vinified as dozens of distinct, terroir-specific cuvées.

This shows Jura Pinot Noir's particular charm: bright red cherry and cranberry with an earthy, almost wild mushroom-like undertone that you don't find in Pinot from warmer places. The tannins are light, the acidity is vivid, and there's a real sense of specific place here. Minimal intervention winemaking lets that come through clearly.

Serve it with a slight chill alongside charcuterie, Comté, or roast chicken.
