Parés Baltà is one of Penedès' leading organic and biodynamic estates, run by two families (Cusiné and Baltà) who've pushed the region toward more serious, terroir-driven winemaking over the past few decades. Blanca Cusiné is one of their top-tier sparkling cuvées, made in the traditional method from estate fruit farmed without chemical inputs.
Expect citrus, orchard fruit, and toasty brioche from extended lees aging, with fine, persistent bubbles and real freshness. This shows what Penedès can do with sparkling wine when farmed and made with genuine ambition rather than treated as a commodity.
