Can Sumoi is an exciting new collaboration between Pepe Raventós, probably the greatest sparkling wine producer in all of Spain, and his childhood friend Francesc Escala. Xarel-lo is an aromatic grape often used in the production of Cava in Cataluña. The Can Sumoi Xarel-lo is biodynamically farmed and bottled without fining or filtration. While crisp and dry, there is a certain exuberant fruitiness to the wine which ably handles a variety of seafood and poultry dishes match with spicy chilis.
